From the volcanic slopes of Nyabihu, Rwanda, Shyira’s anoxic washed Red Bourbon brings the plum acidity, blackcurrant bite, and a flash of jasmine. Precision-fermented with zero oxygen, it’s engineered for intensity.
In contrast, Kilimbi’s honey-processed Bourbon, grown lakeside in Nyamasheke, cools the current with velvet softness. Think earl grey, white peach, and cinnamon sugar.
Grounding the charge, Colombia’s washed Castillo from Luz Helena Salazar delivers structure and grip. Grown in the red clay of Quindío, it brings tamarind acidity and sweetness, rounded up with cocoa nib, and nectarine which balance and weight.
